- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Pour the mixed nuts into a large mixing bowl, spreading them out evenly.
- Drizzle the olive oil over the nuts, then toss them well until each piece is lightly coated and glossy.
- Sprinkle the sea salt and smoked paprika over the nuts, then toss again to distribute the seasonings evenly.
- Spread the seasoned nuts in a single layer on the prepared baking sheet, ensuring they are not overlapping.
- Place the sheet in the oven and roast for 10 to 15 minutes, shaking the pan halfway through to promote even browning and prevent sticking.
- Watch for a golden-brown color and a fragrant, toasty aroma as signs they are done. They will crackle softly as they roast.
- Remove the nuts from the oven and transfer them to a cooling rack, letting them cool completely to crisp up further.
- If you like a hint of sweetness, drizzle the honey or maple syrup over the cooled nuts and toss gently to coat evenly.
- Once cooled and coated, store the roasted nuts in an airtight container at room temperature for up to a week, or longer if refrigerated.
