Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Pour the mixed nuts into a large mixing bowl, spreading them out evenly.
  3. Drizzle the olive oil over the nuts, then toss them well until each piece is lightly coated and glossy.
  4. Sprinkle the sea salt and smoked paprika over the nuts, then toss again to distribute the seasonings evenly.
  5. Spread the seasoned nuts in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  6. Place the sheet in the oven and roast for 10 to 15 minutes, shaking the pan halfway through to promote even browning and prevent sticking.
  7. Watch for a golden-brown color and a fragrant, toasty aroma as signs they are done. They will crackle softly as they roast.
  8. Remove the nuts from the oven and transfer them to a cooling rack, letting them cool completely to crisp up further.
  9. If you like a hint of sweetness, drizzle the honey or maple syrup over the cooled nuts and toss gently to coat evenly.
  10. Once cooled and coated, store the roasted nuts in an airtight container at room temperature for up to a week, or longer if refrigerated.
